Access to fresh fruits and vegetables, and the means to prepare them, is part of being able to eat a nourishing vegan diet. Each vegetable included in the handbook is typically harvested and available in grocery stores, at farm stands, or in produce boxes available through local food banks during these warmer months in the global north. Every veggie includes a picture, image description, and information on the nutrients that each vegetable provides for human bodies. There are also tips for cleaning, cooking, and storing the veggies, with a simple recipe for more instruction on how to prepare something delicious to eat with each one.
Access is just one of the barriers people encounter when transitioning to a plant-based diet. Education, planting community gardens, community supported agriculture, connecting churches with local farmers, and creating more food pantries that have fresh produce are just some ways we can work towards every community being able to feed themselves with nourishing food that does not harm God’s beloved creation–as we know the evils of industrial farming greatly does.
